The other day I was really craving tacos and there’s a truck across the street from my house that I’ve yet to try. But I promised to cook at home every night this week so rather than breaking my vow, I decided to make tacos with my roommate. I had seen this recipe on tasty lots of times and always thought about making them. The recipe seemed similar to the one meal I’m not sick of at my college dining hall, which I look forward to every Wednesday for lunch. Despite how intrigued I was by this recipe, I hadn’t gotten around to making it so I figured this would be the perfect opportunity.
The shrimp was delicious, seasoned with paprika, garlic, oregano, cumin, red pepper flakes, and salt. We opted for a simpler route than the grill and skewers and just cooked them in a skillet. I was going to make the sauce a little healthier by using greek yogurt instead of sour cream, but my roommate had the perfect amount of Mexican sour cream so we opted for that. These were every bit as good as I expected them to be and I used the leftover ingredients to make a great quesadilla for lunch today.
