The other night I made this simple roasted red pepper pasta from Half Baked Harvest for dinner. Sometimes recipes call themselves simple but then call for a bunch of pre chopped ingredients or otherwise already prepared things. But this recipe was actually as simple as it said. I threw some roasted red peppers, sundried tomatoes, garlic, salt, roasted pine nuts (which I roasted myself), parmesan, and crushed red pepper flakes (which I add to almost every recipe I make) in the blender. Then I cooked some farfalle and threw the blended sauce, a bit of pasta cooking water, and more crushed red pepper in the pot with the cooked pasta and let it heat up. I mixed in basil and topped it with more shredded parmesan. While this recipe was still pasta, the sauce was a lot healthier than pastas I usually make, mostly just veggies, which was a nice benefit and it was delicious.
