Lunch today was a simpler version of a spanakopita (Greek spinach pie). I found this recipe from a buzzfeed post called “17 healthy lunches for people who hate salad.” Because seriously, salad is okay as a free appetizer that comes with your meal. But barring extraordinary circumstances, I will never order one in a restaurant or make it as its own meal. Even good salads are usually just kind of a let down for me.
We sautéed spinach, garlic, and onions in olive oil and butter and then let it cool in the fridge for about 5-10 minutes. Meanwhile, we whisked together a mixture of egg, parmesan, feta, and dill. When the spinach had cooled, we squeezed out the extra moisture and then mixed it with the egg mixture. We put the spinach filling into a tortilla, folded it over, and cooked it till the tortilla was crispy, the filling was warm, and the egg was cooked. These actually tasted like spanakopita and even though I’ve never actually made one, I imagine these were way easier.
