Ratatouille

13036587_10204755242594843_1516100515_oHow plain veggies and sauce are actually tasty I’ll never know. A few of my floormates and I made a simplified ratatouille today and it was easy and actually tasted amazing. I don’t have the recipe so I’m going to have to go from memory with spices and ingredients. We sliced eggplant, zucchini, tomatoes, and onion. Separately, we made a sauce of crushed tomatoes, basil, and garlic. In a greased pan we poured all of the sauce at the bottom and placed the layered veggies on top to be nice and pretty. We drizzled a lot of olive oil on top and then placed it in the oven.┬áThe dish baked for an hour, so it wasn’t quick but definitely easy. Not pictured is the ridiculous amount of freshly grated parmesan I topped it with, or the amazing parmesan bread with olive oil balsamic dip we made on the side.
