How plain veggies and sauce are actually tasty I’ll never know. A few of my floormates and I made a simplified ratatouille today and it was easy and actually tasted amazing. I don’t have the recipe so I’m going to have to go from memory with spices and ingredients. We sliced eggplant, zucchini, tomatoes, and onion. Separately, we made a sauce of crushed tomatoes, basil, and garlic. In a greased pan we poured all of the sauce at the bottom and placed the layered veggies on top to be nice and pretty. We drizzled a lot of olive oil on top and then placed it in the oven. The dish baked for an hour, so it wasn’t quick but definitely easy. Not pictured is the ridiculous amount of freshly grated parmesan I topped it with, or the amazing parmesan bread with olive oil balsamic dip we made on the side.
