Homemade Veggie Burgers

13036474_10204755243034854_317115229_oYesterday two of my floormates and I made veggie burgers from scratch. One of the best things about learning more about cooking while in Europe is the fact that they don’t have as many premade foods as we do in the states. You can’t get Morningstar veggie patties here, so if you want a good veggie burger you have to make it.

We did a lentil burger from a modified version of a recipe we found on Pinterest. First we chopped onion, carrots, almonds, and garlic and blended them with sesame seeds and canned lentils using an immersion blender. Next we added dried thyme, oregano, smoked paprika, salt, pepper, bread crumbs, and a beaten egg and tomato paste mixture. When it was all blended we slowly added in 1/4 cup of flour. Next we spread out all of the mixture and scored it with our hands Rachael Ray style and made patties out of each section. We pan fried them and topped with feta, avocado, tomato, and dijon and placed them on a toasted bun. These were delicious and healthy and really filling.
