Another half baked harvest recipe, shocking! This one is officially called “An Irishman’s Mac and Cheese“. Does anyone watch Food Network Star? And if yes does anyone remember Russell from season 9? Because this recipe really fits into his culinary POV which focuses on “culinary sins.” This was mac n cheese loaded up with bacon, beer, and potato chips. The kale pesto came out of left field but made this recipe include at least one healthy food. I was just surprised to see a super food like kale mixed in with carbs, fat, and alcohol, but it actually worked perfectly and was delicious.
Before we started this recipe, we got the kale pesto ready. It was just sliced kale, basil pesto, lemon juice, olive oil, salt, and pepper, super simple and delicious. Next we boiled pasta. Once the pasta was drained we used the same pot to cook the bacon. We left a bit of the bacon grease and then melted butter into that, added flour and whisked it in to make a roux, then whisked in beer to make it a beer flavored roux. Once this was done we added milk and let it all thicken up. We removed that from the heat and added white cheddar, havarti, the kale pesto, salt, pepper, cayenne, and paprika (we used it instead of mustard powder because the grocery store was out of it). From there we mixed in the pasta and transferred everything to a greased baking dish, sprinkled crushed potato chips on the top and baked it for about a half hour.
