Lemon Roasted Salmon

10590707_10204453570053218_1107895503_oHey guess what, another Half Baked Harvest recipe, seriously that blog is incredible. This one is called “One Pan Lemon Roasted Salmon, Potatoes, and Parmesan Asparagus“.

After my five days of eating constantly in France, I needed something healthy. The only ingredient in this that didn’t qualify is the parmesan, which is just sprinkled on top and this was delicious. Also the one pan aspect of this meal was pretty attractive because the current state of our kitchen is frightening and I did not want a lot of dishes to clean. This dish starts by just baking potatoes with olive oil, salt, and pepper for 15 minutes. While those were cooking, we got the rub ready for the salmon. That contained olive oil, honey, garlic, parsley, thyme, oregano, paprika, cayenne, fresh basil, and lemon zest. Once the potatoes had been in for 15 minutes, we took them out and pushed them to the side of the pan. The salmon went in the center with the rub on top and then we tossed asparagus in with the potatoes, sprinkled the veggies with parmesan, and put lemon slices¬†around the top of the entire dish. That baked for another 10 minutes plus a few extra when we couldn’t open the oven without smoke pouring out (our oven malfunctions sometimes) and then it was ready to eat! We had to skip the basil chimichurri due to ingredient problems. We were far away from the bigger grocery store that may have had red wine vinegar, and while searching desperately for cilantro in Netto a guy with an American accent came up to us looking sad and said “they don’t have cilantro in this country.” So we just decided to pass on that sauce, we were hungry and not in the mood to hunt for substitutions. (*UPDATE I went to a restaurant for lunch today and there was DEFINITELY cilantro in my food, so I will be intensifying this search!)

I’ve been saying I’m going to make salmon for months, actually. So I’m glad I finally did it especially because this salmon recipe was unlike one that I’ve ever had and it was amazing. I can’t wait for the leftovers when I get home from class tomorrow.
