French Onion Pasta Bake

I am so excited to write about this dish. My roommate is obsessed with a food blog called Half Baked Harvest and I absolutely understand why (everyone check it out!) We decided to make one of the recipes from it last night and it was one of my favorite dishes I’ve had. It starts by caramelizing onions in butter, brown sugar, and red wine (and Worcestershire sauce but we couldn’t find any) and seriously I could eat these onions on their own forever they’re so sweet and soft and lovely. Next you throw mushrooms and garlic into that and let it cook with some salt and pepper. Once that’s cooked, we added water, chicken broth, thyme, and a bay leaf and let the pasta cook in the entire mixture, using whole wheat pasta was such a good decision for this dish it gave it a really hearty flavor. Finally we added cayenne pepper, heavy cream, gorgonzola, and swiss because we couldn’t find gruyere and put it under the broiler for the cheese to melt for 2 minutes. I am definitely going to make this again it was one of the best pasta dishes I’ve ever made.
