So in attempts to be healthy after eating a waffle on a stick dipped in chocolate for lunch I decided to make baked chicken meatballs and cauliflower “rice” and it was so good! I based the meatballs off of Giada De Laurentiis’s classic turkey Italian meatball recipe. It’s so hard to find ground turkey in Denmark so I used chicken instead and also cut out a bunch of ingredients for convenience. These ended up being ground chicken, something that I’m pretty sure was breadcrumbs (we just bought a package of something that vaguely resembled them after searching for a half hour, and google translate wouldn’t tell us what the package actually said), grated parmesan, eggs, basil, crushed red pepper flakes, garlic, onions, salt, and pepper. We drizzled them with olive oil and baked them at 200º celsius for 15 minutes. We don’t have a food processor in our kitchen so I just used a box grater to cut up the cauliflower and heated it in a skillet with olive oil, salt, and pepper. The sauce is just marinara sauce from a jar with crushed red pepper flakes. Then I just sprinkled some more parmesan on top!
