Last night our floor had our first “family” dinner. We made a lentil curry with cauliflower, chickpeas, and red peppers (forced myself to eat those because I really hate peppers). Everything was cooked in vegetable broth that we made, coconut milk, curry sauce, and olive oil (it should’ve been coconut oil but it’s impossible to find here, I’ve been hunting with no luck). Then we topped it with plain yogurt and parsley. I love living with other people who like to cook because they come up with ideas and recipes that I’d never think of on my own. Also bonus, when you split groceries between 11 people this ended up costing me $1.80!
