This is by no means the most impressive dish I’ve cooked considering the ravioli was pre filled with spinach and ricotta and all I did was boil it. BUT it was the first dish I cooked with my new roommates in Copenhagen. Laziness took over here and we just threw these on a bed of arugula with salt and pepper. There was talk of salmon that evening which surely would have been a disaster. This was absolutely more manageable given the fact that we were jetlagged and it was our first time cooking in a new kitchen. Plus it reminded me how much I love raw arugula, which will be a perfect healthy and easy edition to lunches or dinners when I don’t want or feel like cooking other vegetables.
